BBQ chicken with potatoes and a medley of vegetables is a 'party in your mouth' as they say. Simple to prepare and yet makes you look like a novice in the kitchen wow your family and friends with this dish.

Ingredients
Preheat oven to 400 degrees. F
Clean chicken and pat dry, place in a bowl then add olive oil, 1 teaspoon paprika, 1 teaspoon salt and 1 teaspoon pepper then toss chicken until all evenly coated. Pour 1 cup of BBQ sauce in bowl and toss for an even coating. Let the chicken sit for a few hour or if you work do this process before you go to work and let marinade in fridge till you are ready to cook. Place chicken in oven and bake for 30 to 45 minutes or till cooked all the way through, making sure to turn every 15 minutes and glaze with more BBQ sauce when you turn over.
While your chicken is in the oven, wash and rinse your baby potatoes, mushrooms, 1 green, yellow and orange bell pepper.
Then slice as show above in to even piece. Before placing in oven season with sprinkle of salt and pepper and 1 teaspoon of dried parsley and basil. Drizzle a little olive oil over potato, mushroom and bell pepper mix then cover with foil to seal in flavors and place in oven for about 30 - 45 minutes.
Put a pan to medium heat and add 1 tablespoon extra-virgin olive oil. Add onions,orange bell pepper, garlic and cook for 5 minutes. Add 1 can (14oz ) crushed tomatoes. 1/2 cup of water and let simmer for 10 minutes making sure to stir every 2 minutes add pinch of salt and pepper to taste. For smooth consistency use an immersion blender or let sauce cool down some then place in blender then place back on stove top to reheat.
