Delicious & Beautiful Dishes From Simple Fresh Ingredients.

Food has no boundaries so the rules can be broken and reinvented. My version of meatloaf and potatoes. Its always great to put a new spin on classic dishes and make them fresh and exciting. Plating always helps make an old dish new and inspiring.

Ingredients
  • Extra-virgin olive oil, for drizzling
  • 1 lbs ground turkey
  • 1 lbs Idaho potatoes
  • Salt and pepper
  • 1 large onions, chopped
  • 2 sachet packs of oatmeal
  • 1 clove of garlic
  • 1/2 cup of ketchup
  • 1/2 cup of mustard
  • 1  (15oz) can of creamed  corn
Directions
Preheat oven to 350

Peal and dice potatoes. Drizzle some extra-virgin olive oil lightly and sprinkle 1 teaspoon salt and pepper and place in oven for 1 hour till soft inside and a brown caramelized outside, Make sure that you are tossing them every 15 minutes so they cook evenly and don't stick to pan.

In a mixing boil add 1 chopped onion, crushed clove of garlic, 1 teaspoon on salt and black pepper to ground turkey. Mix well then add the rest of ingredients, 2 satches of oatmeal, 1/2 a cup of ketchup and 1/2 cup mustard. Shape accordingly then place in oven tray and put in oven for 45 minutes to an hour till a golden brown.

Remove potatoes and meat loaf from oven and let rest for 2 mins. while the two are resting, get a pan or small pot to medium heat and open a can of creamed corn and let simmer gently, then remove of heat.

Look at pictures above for plating. Place creamed corn first on plate then scoop of potatoes on top then cut a slice of meat loaf and place on top.
