This dish has what I would like to refer to as LAYERS. Each layer works together to create the perfect meal. Its a little more hands on but once prepared it is so worth the effort as you cut into the succulent Cornish Hen, pile on a roasted potato and mushroom then on the same fork dip all that into the sauce for the perfect bite. Mouthwatering and flavorful, meal time has never tasted so good!

Ingredients
  • 2 Cornish hens, Cut in half
  • 1 lemon
  • 1 green bell pepper
  • 1/2 cup lemon juice
  • 1/4 cup Olive Oil
  • Salt and pepper
  • 1 pound red new potatoes 
  • 1 tablespoons Olive Oil, To Drizzle
  • Salt and  pepper
  • 1/2 pound white mushrooms
  • 1 tablespoons Olive Oil
  • 1 large onions, chopped
  • 1 can crushed tomatoes
  • 1 clove of garlic
  • 1 tablespoon Olive Oil
Directions

Directions Preheat oven to 400 degrees. Cut potatoes in half and place in oven tray. Drizzle in Olive oil and season with salt and pepper. Toss to coat. Roast for 30 minutes, until golden, crispy and tender. Meanwhile....

Pat the hens dry with a cloth. Cut in half then season with salt and pepper. Add green bell pepper, Olive oil, lemon juice and blend together then pour out into large mixing bowl. Place your Cornish hen 1/2 pieces in the bowl making sure to coat and rub hen all over. Place on a oven tray and roast for 20 mins. Reduce heat and continue roasting for 20 mins basting the hens occasionally with a mix of 1/4 cup Olive oil and 1/4 lemon juice.

In the meantime also occasionally also check and tossing your potatoes and making sure they do not stick on the oven tray.

In the last 20 mins of roasting the Cornish Hen, cut your mushrooms in half then place in a small oven try. Season with a little salt and pepper then drizzle Olive oil and place in oven for 15 mins.

Now that every thing is in the oven you can put a pan to medium heat and add 1 tablespoon extra-virgin olive oil. Add onions,orange bell pepper, garlic and cook for 5 minutes. Add 1 can (14oz ) crushed tomatoes. 1/2 cup of water and let simmer for 10 minutes making sure to stir every 2 minutes add pinch of salt and pepper to taste.

Once everything is done and still hot you can plate and serve. Look at the pictures above for plating. Sauce first then potatoes and mushrooms finally finishing of with Cornish Hen on the top and place a little leaf of cilantro or basil for garnish. Enjoy!

Lemon with poultry is one of my favorite flavor combos. I've never tried making my own Cornish Hens, but I do love them. I bet this would also be good with some rosemary and olives.

I have not made Cornish hens in a long time. My husband always says they don't have enough meat on them. I, on the other hand, love them. Yours look fabulous.
